  1. Heat up your almond milk in a saucepan over medium-high heat until it begins to slightly simmer.
  2. Turn off the heat and place two black tea bags into the heated almond milk. After 3-5 minutes, remove the teabags.*
  3. Add the Chaga, cinnamon, ground ginger, cloves, and your favorite sweetener. Stir until combined over medium-high heat.
  4. Taste and adjust for the sweetness level.
  5. Enjoy hot or iced!**
  6. Top with coconut whip cream if desired.

*If you’re trying to avoid caffeine, you can use decaf black tea or just leave the tea out altogether and skip step 2.
** For the iced version, let the brewed chai completely cool and pour over a glass of ice.

Directions for Paleo Chaga Mole

  1. Heat the avocado oil in a medium saucepan over medium-high heat. Add your onion, garlic, and jalapeño (if using) and sauté until they’re tender. Should take about 5-7 minutes.
  2. Then add your chili powder, cinnamon, cumin, oregano, cloves, coriander, and cassava flour and mix until everything is combined.
  3. Add your broth.
  4. Add your nut butter, tomato paste, cacao powder, Chaga, and salt. Stir until combined on medium-high heat. Bring the sauce to a simmer and stir until it’s thickens a bit.
  5. Blend the mixture until it’s smooth. You can use an immersion blender or put the mixture into a blender. Be very cautious when blending, making sure the sauce has cooled to a lukewarm temperature.
  6. Carefully taste. Add your sweetener if you’d like it a bit sweet.
  7. Serve and enjoy!

  1. In a large sauté pan, add your avocado oil and butternut squash. Sauté on medium-high heat for 6-8 minutes or until squash is slightly tender.
  2. Add your garlic and onion and continue to sauté for 3 minutes.*
  3. Add your broth, sage, rosemary, turmeric, salt, pepper, and Turkey Tail.
  4. Bring to a simmer and cook for 15-20 minutes or until butternut squash is tender and soft. Let the mix cool for 10-15 minutes.
  5. With a blender, blend until the soup is smooth.
  6. Once blended, add your coconut milk.

Very rarely is this species of cordyceps sold in North America. But if you do see it on an ingredients list be wary as it is very unlikely for it to be the caterpillar fungus. It’s likely composed of either pure mycelium in the form of Cordyceps Cs-4 or myceliated grain, which contains no actual mushrooms and very little of the beneficial bio-active compounds that are present in the mushrooms.

This means that because the nutrient-dense mushroom (fruiting body) has been substituted with myceliated grain, you’re left with lower amounts of beta-glucans2,3 — valuable compounds present in the mushroom. Sadly, many companies are still selling their cordyceps mushroom supplements with either the Cordyceps sinensis photos or marketing information.

The key takeaway here is to always be careful about not only what mushrooms you’re purchasing, but what you’re putting into your body. Always research the products and companies you purchase from.

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine all dry ingredients in a bowl and whisk until you have a homogenous mixture.

  4. In another bowl, combine the wet ingredients. Once thoroughly combined, stir this mixture into the dry ingredients. This forms a thick dough once combined.

For the tortillas, if you want to keep it low-cab, you can use almond flour, coconut flour, or cauliflower tortillas. Cassava tortillas work too. Of course, you can use the real deal and get some great quality organic corn tortillas.
If you can’t tolerate dairy, you can substitute a cashew cheese or other non-dairy cheese.

Servings: 3 large quesadillas (about 3 servings)
Prep Time: 5 minutes
Cook Time: 15-20 minutes

Mushroom & Onion Keto Quesadilla Ingredients:

  1. Prep work: Slice your onion. De-stem and slice your mushrooms. Shred your cheese.
  2. In a skillet, heat 1/2 TB avocado oil over medium heat.
  3. Add your sliced onions and cook until they are caramelized.
  4. Add your mushrooms and cook until tender. About 5 minutes.
  5. Add your salt, Lion’s Mane, and spinach. Mix and keep on the heat until the spinach is slightly wilted.
  6. Move the onion & mushroom mixture into a separate bowl.
  7. Wipe the pan clean if you need. Heat 1/2 TB of avocado oil in the pan over medium heat.
  8. Place a tortilla on the pan and cook for about a minute.
  9. Flip the tortilla with a spatula and spread a thin layer of your cooked onion and mushroom mixture.
  10. Sprinkle a handful of cheese on top.
  11. Place a second tortilla on top of the cheese, pressing it gently with a spatula.
  12. Delicately flip and cook the other side until it’s a nice and crispy brown. The cheese should be melted.
  13. Remove the quesadilla and place it on your plate.
  14. Repeat the process with your other tortillas.
  15. Enjoy with sauerkraut, cilantro, avocado, or yogurt!

Note: if you think you’ll have a hard time flipping once the second tortilla has been placed (step 12), only spread the mushroom and onion mixture on half of your first tortilla, then gently fold the other side on top, like a taco. Then, flip and cook.

Cinnamon “Sugar” Coating Ingredients:


  1. Preheat oven to 350° F.
  2. Combine all the dry donut ingredients in a glass bowl - almond flour, sweetener, baking powder, salt, cinnamon, and Lion’s Mane. Mix until combined.
  3. Add your wet donut ingredients - egg, coconut oil, and vanilla. Mix until combined.
  4. Refrigerate the dough for about 10-15 minutes so that it’s firm enough to easily work with and roll into balls.
  5. After 10-15 minutes in the fridge, roll the dough into 12 balls.
  6. Place the balls on a baking tray lined with parchment paper and bake for 15 minutes.
  7. While they are baking, make your cinnamon “sugar” coating.
  8. In a small bowl, mix the sweetener and the cinnamon.
  9. In a separate small bowl, have your melted coconut oil.
  10. After the keto donuts have cooled, dip each one into the melted coconut oil and then roll in the cinnamon and sweetener mix.

Chocolate Mushroom Glaze:

Directions: Preheat oven to 350˚. In a large bowl, mix all donut ingredients until a smooth batter forms. Gently spoon batter into the donut pan. Bake for 20-25 minutes or until cooked all the way through (toothpick trick to test readiness). Let cool for 10 minutes.

#5. Main Dishes (stews; soups; pasta)

Versatile and flavorful, mushrooms can be a nice, earthy addition to main dishes, as well as soups, stews and pasta. This recipe features lion’s mane, which is used to support healthy brain function*.

Creamy Lemon Butternut Squash Lion’s Mane Pasta

Directions: In a large pot, heat 1 tablespoon of the oil on medium heat. Add onion and sauté for 3 minutes until translucent. Add one clove of the diced garlic, and cook for a minute longer. To the large pot, add vegetable broth, coconut milk, and lemon juice. Bring to a simmer – reduce heat if the mixture comes to a full boil.

Meanwhile, in a large frying pan, heat 1 tablespoon of oil on medium heat. Add in butternut squash and fresh rosemary, cook while tossing frequently to heat & soften slightly – approximately 5 minutes. After the 5 minutes, add the butternut squash to the coconut milk mixture, but reserve the frying pan – you will use it again!

Add the tapioca flour to the “noodle” and sauce mixture, stirring periodically. Continue cooking for 15-20 minutes, or until the “noodles” have softened to your desired firmness. While the “noodles” cook, tear the lion’s mane into bite-sized pieces. Heat the frying pan you had set aside on medium heat. Once heated, add the lion’s mane. Dry cook in the pan for a moment or two, or until any water released from the mushrooms is reabsorbed. Once any water is reabsorbed, add the last tablespoon of oil and the remaining clove of diced garlic. Cook, stirring frequently until mushrooms are golden brown – about 10-15 minutes.

Once your pasta has reached desired firmness, serve into bowls, and top with a generous heap of the cooked mushrooms and a sprinkle of lemon zest. Enjoy!
