Superfood Coffee Ice Cream w/ Hardshell Chocolate Sauce

Sugarfree coffee ice cream packed w/anabolic recovery proteins, gut strengthening amino acids, immune boosting/adaptogenic Chinese herbs, and cognitive enhancing fats. Topped with my mct charged hard shell chocolate sauce to give it that perfect mocha flavor. Prep: French press 4 tbs ground coffee then pour into ice cube mold. Freeze overnight.

In a Vitamix:

Optional- 1-2 tbs cacao nibs

Use the tamper to pound into creamy ice cream texture. Set back in a freezer.

Chocolate sauce:

How: Stir until smooth and add to piping bag.

We all love and adore adding our medicinal mushrooms to our favorite meals, coffee, tea, smoothies, chocolates and beyond! Well, another upcoming trend that you may be aware of is beauty care products that use medicinal mushrooms like chaga, reishi, maitake, shiitake, and tremella. We've been intrigued by the idea of adding mushroom extracts to body care for some time. So, we felt inspired and curious to explore this idea some more!

This is a classic skin balm inspired by a great recipe we found in the book Healing Mushrooms by Tero Isokauppila. It is both calming and hydrating as it is rich in shea, cacao butter, and coconut oil. These stable and soothing fats help nourish and moisturize dry skin. The addition of Chaga, which contains the unique compounds called SOD (superoxide dismutase) and melanin, which further boosts its skin nourishment and protective factors from everyday stressors like environmental toxins, UV light, dehydration, and nutrient-poor food. Directions

  1. Using the double boiler method. Add the shea, cacao, and coconut oil. Melt at low heat until everything is mixed just right. Be mindful not to turn the heat up too much!
  2. Next, add your desired essential oils and chaga powdered extract. Use a whisk to combine everything nicely. Once you have done so. Pour into a small mason jar or some other fun creative jar you intend to use! Store in the refrigerator. It will need at least a 2-4 hours to solidify. You can then store at room temperature. This will keep for roughly a couple of years. ENJOY!!

Directions:

  1. Brew your coffee with your preferred method of choice
  2. Add 1/2 of the coffee and all the other ingredients to a coffee mug and blend using an immersion blender or milk frother!

In need of a different take on the classic energy bites recipe that typically calls for dates and some kind nut or seed. Here at Real Mushrooms HQ, we have been experimenting with different medicinal mushrooms of all kinds for an energy bite recipe. In this recipe, chaga extract pairs beautifully with the nutty flavor of hemp seeds and caramel sweetness from the dates. The balance of chaga, which gives an earthy tone and the slight bitterness from the cacao really bring this recipe up a notch. I think you guys will really enjoy this one! Let's get down to business.   1. First, add dates to a high-speed blender and blend till the dates are pretty blended up.
  2. Once done take the dates out and add in the pecans next. Blend this up till they turn to little pieces.
  3. After that, add in the cacao powder, nut or seed butter of choice, chaga extract, sea salt, and coconut oil if desired! Blend everything up till it begins to bind together and turn more dough like.
  4. Take the energy bite dough and place in the fridge for roughly 10-20 minutes.
  5. Take out the dough and roll the dough into energy bites or small size energy bars, Whatever suits your fancy here!

Directions: Mix all ingredients together until a dough forms. Press dough into a parchment-lined 8x8 pan and freeze for an hour. Remove and cut into 8-10 rectangles depending on how big you want them. Place on a parchment-lined baking sheet & bake at 300 for 12 minutes. Store in the fridge.

Directions:

  1. Gently heat ⅓ cup coconut milk in a pot, add ¼ cup coconut butter, ¼ cup maple syrup and a pinch of sea salt.
  2. Once smooth and well combined, add 2 cups of unsweetened desiccated coconut and optional 2 tsp Real Mushrooms Reishi 415.
  3. Scoop into the lined loaf tin, flatten and place in freezer for 1-2 hours.
  4. Next, melt down 200g of our mushroom chocolate bar.
  5. Slice your solidified coconut mixture into 7-8 bars, then gently dip into melted chocolate and coat using 2 forks. Let excess drip off as much as possible.
  6. Place on baking paper, drizzle leftover chocolate over the top of all bars, then place in the fridge to set. Enjoy! 🙂

Spiced Mushroom Elixir

Directions: Blend it all together for about a minute after heating the milk and it’s good to go. You can use any milk you like and also swap out the cardamon for ginger, cinnamon, maca etc. The cacao and coconut oil give it a lovely thick chocolate texture.

These are not just any donut, friends! These are PALEO PROTEIN DONUTS. You can literally have your donut and eat it too. It's guilt-free and does a body good thanks to some unique and creative ingredients that bring together the ultimate donut experience. Donut recipe goodness below!

Donut ingredients:

Directions:

  1. Preheat oven to 350
  2. In a large bowl, mix all donut ingredients until a smooth batter forms
  3. Gently spoon batter into donut pan
  4. Bake for 20-25 minutes or until cooked all the way through (toothpick trick to test readiness)
  5. Let cool for 10 minutes

While the donuts cool, prep the glaze...

  1. In a saucepan, melt the coconut butter on low heat.
  2. When the butter has melted, turn off the heat and add in the remaining ingredients.
  3. Whisk everything together until evenly combined.

Dip the top of each donut into the glaze and place on a rack to let the glaze harden.

Depending on the temperature of your kitchen this may take a while. If you're impatient go ahead and pop them in the refrigerator.
